Vegan Gluten Free Pate – Raw Food

Let this be your “secret spread” and impress your non-vegan or non- gluten free friends and co-workers. Use as a spread for vegan spread on gluten-free sandwiches, crackers, toast. You can use as a dip for veggies. Make fab sliders, like in the picture. Be creative…

1 1/2 Cups raw sunflower seeds (that have been soaked 6 – 8 hours and then drained)
1 Tbsp dry parsley (or 1/4 bunch fresh parsley)
1 Tbsp dry basil (or 1 bunch fresh cilantro)
1/4 Cup extra virgin olive oil
1/2 Clove garlic (or 1/4 tsp dry garlic – not garlic salt)
4 medium carrots, grated or chopped
Juice of one fresh lemon
1/4 Tsp. sea salt
Dash of cayenne pepper

Directions

1. In a Food Processor or Vita Mix, process drained sunflower seeds until roughly cut.
2. Remove sunflower seeds from mixing bowl.
3. Add to mixing bowl the rest of the ingredients and process.
4. Add back to the mixing bowl the processed sunflower seeds to the veggie mixture.
5. Mix again until smooth.

Serving Size: 8 servings of 1/4 cup each

Try shaping this Vegan Gluten Free Pate into patties, then lightly baked or fry. Let is gain flavor over night in the fridge. Make a bunch and keep it for the whole weekend.
